This tasty and elegance soup is a great combination of mushroom and spinach. It is very healthy and nutritious soup. You can make this soup in advance and before serving you can reheat it.
Mushroom-and-Spinach-Soup
Ingredients For Mushroom and Spinach Soup

    -Butter - 3 tbsp
    -Chopped leeks - 3
    -Chopped onions - 2
    -Minced garlic - 2 cloves
    -Finely chopped mushrooms - 2 pounds
    -Dried savory - 2 tsp
    -Dried oregano - 1/4 tsp
    -Sherry - 1/3 cup
    -Chicken stock - 9 cups
    -Paste of tomato - 2 tbsp
    -1 bay leaf
    -Salt acc to taste
    -Black pepper grounded acc to taste
    -Spinach - 10 leaves

How To Make Mushroom and Spinach Soup

    -Cook butter, garlic, onions, and leeks till they get clear. Now add mushrooms, oregano, stock, bay leaf, savory, sherry, and tomato paste to the above mixture. Place it over low flame for about 30 minutes. (Keep chopped mushroom aside, don/t add them into the mixture).
    -Now drain out all the vegetables from the above mixture.
    -Now put reserved and chopped mushrooms along with spinach leaves into the Stir the reserved mushrooms and spinach leaves into the meat or fish stock and saute the mixture until the spinach gets dried up. Garnish the soup with Parmesan cheese while serving.
